We make New Orleans Style Pizza. What is New Orleans Style? Italian immigrants in New Orleans are Sicilian and New Orleans cuisine is born out of the mix of cultures that immigrated here, so this is where New Orleans Style is born!

Our pizza is thick like our air, spicy like our hearts, and decadent like our souls.

Bobaluchi’s pizza is born out of Sicilian tradition, with two distinct styles

Our 16” square - Sfincione (sfeen-CHOH-nay) translating to “thick sponge” due to its thick but airy focaccia-like texture. Baked in a pan in lots of oil so the bottom is almost fried.

Our 18” Round - Faccia di Vecchia (FAH-cha dee VEK-ya) meaning “the old lady’s face” due to its round, dimpled and blistered texture. Baked on a stone deck.

The dough is the same for both, but the square is double the weight. Both are made with a mixture of flours, fat, yeast, salt, water, and love.

Cheese and Sauce Styles

Cheese blend

Refers to our house blend of low moisture, whole mozzarella, and sharp provolone unless otherwise noted.

House Red Sauce

Based on a sauce piquant, slow cooked onion and jalapeno peppers, fresh San Marzano tomato’s, spices, it’s a savoy red gray, with just a little kick.

House White Sauce

slow cooked onion, jalapenos, garlic and mushrooms; Blended with heavy cream, crème fraîche, and lemon pepper.

Stracciatella Drizzle

Stracciatella is the soft creamy center of burrata, we mix that with a little ricotta cheese, salt and pepper.

Red Pepper Sauce Drizzle

We take roasted red peppers and blend them down with a little aioli, olive oil, garlic, oregano, lemon pepper, a touch of cayenne, and parmesan cheese.
